This is one of our favorite summer meals.  We like to go vegetarian as much as possible because not only is it healthy, but it saves money!  It’s the perfect, refreshing meal on a hot summer day, when you don’t feel like cooking.

Tip for the kiddos: Jackson had a kid-approved vegetarian meal of carrots and pita triangles with hummus for dipping while we enjoyed these wraps.

Here’s what you’ll need: Vegetarian Greek Wraps

  • whole wheat pita
  • hummus
  • iceberg lettuce, chopped
  • cucumbers, diced
  • roma tomatoes, diced
  • red onion, diced
  • sliced black olives
  • chick peas
  • feta cheese
  • greek vinaigrette

The directions for this one are easy:

  • Heat pita in microwave for 30 seconds
  • Spread a thin layer of hummus on the warm pita
  • Top with veggies, chick peas, olives, and cheese
  • Drizzle with dressing before serving

We made these for dinner last night.  Since the wraps are so healthy, I figured it was okay for us to have a naughty dessert (everything in moderation, right?).  Have you seen this no-bake fruity pebble cheesecake floating around the internet?  I swear it was following me everywhere.  I just had to try it, and I must say I was not disappointed that I did.  And as it turns out, it was the perfect dessert to have Jackson help me make.  He loved helping with the crust!

This cheesecake was so good, you would never even know it was no-bake.  Now I’m brainstorming what other cereals I could use… Stay tuned!
