In my quest to eat more salads (see my guide to a week’s worth of salads here), I’ve been getting really creative with my meals. Last week, I made what may be my best salad yet. I’m not really sure what to call it… it’s a cross between a taco salad and a buffalo chicken salad… but then it has kale. And chick peas. So I’m going to call it a “Modern Taco Salad.” It’s healthy and delicious and sure to satisfy all your cravings.

What’s in it?
- kale (chopped into bite sized pieces and then massaged with sea salt)
- green onion, diced
- fresh cilantro
- Spanish olives
- chicken (I used rotisserie white meat)
- feta cheese
- chick peas
- tortilla strips
- ranch (I used the bottled stuff, but fresh and homemade is always better!)
Mix kale greens with diced green onions and cilantro, to taste. Top with olives, chicken, feta, and chick peas. Drizzle with ranch and Sriracha and top with a few tortilla strips for crunch! Yum!
