Pumpkin spice is everywhere this time of year. Have we gone a little overboard on with seasonal flavor? Probably. But for some uncontrollable reason, I can’t seem to help myself when I see a new pumpkin spice product. While shopping today, I came across this Pumpkin Spice Life Cereal. After checking the ingredients (for my allergy-mamas, it’s peanut and tree-nut free!), I tossed the box in my cart.
When I got home, I realized I didn’t pick up anything for dessert. I did, however, find a bag of marshmallows in the cupboard. I whipped up a batch of these fool-proof cereal bars. The cereal has just the right amount of pumpkin flavor – not too sweet.
The bars were a huge hit with my boys! I’ll definitely be making this again as a Halloween treat for my nut-allergy boy.
- 6 cups Pumpkin Spice Life Cereal
- 10 oz package marshmallows
- 3 tablespoons salted butter
In a large pot, over low heat, melt butter and marshmallows. Stir constantly until there are no lumps. Remove from heat and stir in cereal immediately.
In a casserole dish, coated with cooking spray, pour in mixture. Press with fingers to create an even layer of cereal bars.
Cover with plastic wrap and let bars sit for an hour before cutting and serving.
