I’m the person who’s always on the lookout for new and exciting food products. Sometimes even new packaging gets me. For someone who studied retail strategies in college, I sure am a sucker. I also LOVE feta. I mean I don’t just like feta, I REALLY REALLY love it! That’s why I was so excited when I found this Athenos Jalapeño Pepper Feta at the grocery store.
At first I thought I was going to make some sort of taco salad with the cheese – and hey, I still might (stay tuned) – but I’ve been on a nacho-kick lately. Actually, I should rephrase that. I’m ALWAYS on a nacho-kick. Although you can’t really go wrong with nachos, when you eat them a lot, sometimes you just need something a little different.
Enjoy these easy and delicious jalapeño feta nachos. This feta has just enough kick, without being overpoweringly spicy. Let me know what you think!
- tortilla chips (I like On the Border or Trader Joe’s)
- black beans
- shredded chicken (I use rotisserie)
- corn, fresh off the cob
- Athenos Jalapeño Pepper Feta
- fresh cilantro
- fresh salsa
Set oven to broil. On a cookie sheet, layer chips, beans, cheese, and corn. Broil for 5 minutes. Add cilantro and salsa and top with lime juice.
In a rush? You can microwave the nachos for 90 seconds instead of broiling.
